  1. A pH meter costs $15 to $25 and can be purchased nearby, such as the Ace store in Exmore.

    You can call the Food Safety folks at the Health Department. The Main Office in Accomac will work with you for an inspection of your kitchen. Call 757-5880 and wait for the Environmental Health/Food Safety option in the message menu.

    Talk with the Food Safety folks at the Health Department about labeling of your product.

  2. David, how kind of you to reach out! Right now I am waiting for VDACS approval to get started actually making kraut. I’ve already purchased, calibrated, and used a pH meter to test the 42 samples I gave to Virginia Tech as a reference for Ms Eifert. I had no idea I could buy one locally, though!

    Aside from VDACS approval, the next bottleneck is finalizing a kitchen I can use. I have a plan and this will be the subject of another article!
