CAPE CHARLES, Va. — The 4-H Ham Project is returning in 2025, offering Eastern Shore youth the opportunity to master the art of curing Virginia-style country ham. Open to participants aged 9 to 18, the program combines traditional food preservation techniques with agricultural education.
Scheduled to run from January to May at Pickett’s Harbor Farms, located at 3119 Pickett’s Harbor Dr., Cape Charles, the project requires participants to attend several hands-on curing sessions and workshops. The first session is tentatively slated for January 19, 2025.
Participants must commit to showcasing at least one ham at the Eastern Shore Agricultural Fair in October 2025. Registration costs are $15 for one ham or $20 for two. Initial registration is due by December 1, 2024, and participants will also need to enroll online through the 4-H platform following their registration.
“This project not only teaches youth about the salting, smoking, and curing process but also instills a deep appreciation for agricultural traditions,” said Erin Morgan, Northampton County’s 4-H agent. “It’s an invaluable hands-on experience that fosters responsibility and pride in their work.”
The program is supported by the Virginia Cooperative Extension, a partnership involving Virginia Tech, Virginia State University, the U.S. Department of Agriculture, and local governments. Its inclusive approach ensures that programs are accessible to all youth, regardless of background.
