A few years ago, while attending a sporting event in Washington DC, we came across a wonderful little French spot called the Bistro Du Jour, and this is where I discovered a refreshing, classic French delight: The Nicoise Salad.
Nicoise salad, also known as “Salade Niçoise,” is a timeless French classic. Hailing from the beautiful coastal city of Nice on the French Riviera, this vibrant and nutritious dish embodies the essence of Mediterranean cuisine. With a combination of fresh vegetables, briny olives, tender tuna, and a punchy vinaigrette, the Nicoise salad takes you right back to the seas of southern France.
The roots of Nicoise salad can be traced back to the late 19th century in the bustling city of Nice, located in the southeastern part of France. Historically a popular seaport, Nice’s culinary heritage has been heavily influenced by various Mediterranean cultures, including Italian and Provençal cuisines. The salad’s name is derived from “Niçois,” the term used to describe people from Nice.
The beauty of the Nicoise salad lies in its simplicity and the use of fresh, local ingredients, many of which are readily available here on the Shore. The classic Nicoise typically includes the following components:
- Tomatoes: Ripe and juicy tomatoes are the base of the salad, providing a burst of sweetness and color.
- Hard-Boiled Eggs: Sliced hard-boiled eggs add creaminess and protein, enhancing the salad’s nutritional value.
- Niçoise Olives: These small, dark olives from the region add a briny and slightly tangy flavor.
- Green Beans: Blanched or steamed green beans bring a crunchy texture and earthy taste to the mix.
- Tuna: Canned or freshly grilled tuna serves as the protein highlight, imparting a satisfying umami element.
- Anchovies: These small, salted fish filets provide an additional layer of brininess to the salad.
- Potatoes: Tender, boiled new potatoes contribute a comforting heartiness.
- Red Onion: Thinly sliced red onions add a mild kick to balance the flavors.
- Lettuce: Crisp lettuce leaves act as a bed for the other ingredients, bringing freshness and texture to each bite.
The dressing is key to tying all the components together. A classic Nicoise salad is dressed with a zesty vinaigrette made from extra virgin olive oil, Dijon mustard, red wine vinegar, minced garlic, and a pinch of dried herbs like thyme and oregano.
Traditionally, a Nicoise salad is presented with each ingredient arranged on a large platter, showcasing its texture and vibrant colors.
The Nicoise salad truly embodies the spirit of Mediterranean living and the culinary artistry of the French Riviera. Bursting with fresh flavors and wholesome, healthy ingredients, this salad remains a classic summer treat.

I will be making this very soon. Thank you!!
